I have always wished I was a bird. Not just any bird, a Canadian Goose.
When I was young, I would hear their honking, look up and envy their knowing. They knew exactly where they were going, what their days would be, what was expected of them. Nothing grandiose, just beautiful simplicity. The arrow they formed in flight, a map that read- follow us, we know the way. Today their calls now bring me comfort, for many reasons. One being, the reminder that I am doing enough.
Simple supper- low in cost, high in comfort:
Oven steamed long grain white rice: 1C rice, 2C hot water, a pinch of salt. Bake covered for 30 minutes at 350, fluff with fork.
While your rice is steaming make your hamburger gravy: 1 lb. hamburger, brown in skillet. Add onion(dried if you like) & pepper, don’t be shy. Remove from skillet, drain if needed. Add 1 can (15 oz.) Beef broth to hot skillet. While that is heating, make slurry of 1/4 C cold water and 2 Tbsp cornstarch or arrowroot powder. Add to hot broth & whisk until it thickens. Return hamburger to gravy and simmer until rice is done.
Heat up a can of French style green beans, as well, & Enjoy!
